Meringue Powder: A Versatile Ingredient for Your Desserts

Meringue powder is an essential ingredient for easily making meringues, pavlovas, and buttercream. Ready to use, simply add some water and, if desired, sugar, to achieve a perfect preparation in no time.

Tip: Always use a clean spoon to ensure optimal hygiene and maintain the product's quality.

Although this powder's consistency is not designed for royal icing, we tested it and achieved surprisingly good results! Discover our recipe for a successful royal icing.

Meringue Preparation:

  1. Preheat the oven to 120°C (100°C for fan ovens).
  2. Ensure the bowl and electric mixer are well degreased.
  3. Mix 14 grams of meringue powder with 125 ml of water and 125 grams of fine sugar.
  4. Whip at high speed until a white foam forms.
  5. Gradually add 250 grams of sugar, continuing to whip until stiff peaks form.
  6. Pipe the meringues onto a baking sheet lined with parchment paper.
  7. Dry the meringues in the oven for about 1½ hours and allow them to cool in the oven.

Pavlova Preparation:

  1. Preheat the oven to 120°C (100°C for fan ovens).
  2. In a degreased bowl, mix 14 grams of meringue powder, 125 ml of water, and 125 grams of fine sugar.
  3. Whip at high speed until a white foam forms, then gradually add 500 grams of sugar.
  4. Continue whipping until stiff peaks form.
  5. Shape the mixture into a circle about 20 cm in diameter on a baking sheet lined with parchment paper.
  6. Dry the pavlova in the oven for about 2½ hours and allow it to cool in the oven.
  7. Whip 250 ml of cream with 2 tablespoons of powdered sugar until a firm cream forms. Spread the cream over the cooled pavlova and decorate with fresh fruits and sugar-glazed berries.

American Buttercream Preparation:

  1. In a bowl, mix 190 grams of Crisco, 7 teaspoons (35 grams) of water, 450 grams of powdered sugar, and 1 tablespoon of meringue powder.
  2. Add 4 teaspoons of water (40 grams) and mix until a smooth, spreadable cream forms.
