Usage in baking

Using ammonium bicarbonate in baking is essential for cakes mainly with eggs. It speeds up the processing of relatively fast baked products such as cupcakes or cookies.

Do not use this ammonium carbonate when making large cakes, pies with a very long baking time. The gases released from the bicarbonate must be able to escape properly.

Adaptability to fine and dry cookies

Ammonium carbonate is particularly suitable for fine and dry cookies as well as crackers. When heated, it releases ammonia and carbon dioxide gases, allowing for faster baking and drying times.

The thinner consistency of the cookies allows the bitter ammonia gas to escape more easily, rather than being trapped, as it would be in a thicker mass.

Precautions for use

It is important not to use ammonium carbonate for making large cakes and pies with long baking times, as the gases released must escape properly to avoid an undesirable taste.
